Gluten Free Recipe
Chicken Curry

This easy-to-make curry is gluten-free and the addition of Garam Masala (an indian blend of spices available in the supermarket) gives it a lovely rich flavour.

INGREDIENTS:

1tbs olive oil
2-3 cloves garlic, crushed
1 Medium onion, chopped
2 Tbsp garam masala
1 tsp ground coriander
1/2 tsp dried mint
570g boneless skinless chicken breast diced
200ml Water

Method
1. Heat the oil in a wok or large, heavy frying pan. Add the garlic and onion and stir fry for about 5 mins until onion is golden
2. Stir in the garam masala, coriander and mint. Add the chicken and cook over moderate heat for 5 min stirring occasionally.
3. Add water, stir and simmer without the lid for 10-15min until the chicken is cooked and sauce has thickened.
4. If you like fresh coriander, stir in a tablespoon chopped prior to serving.

Coeliac Disease Screening

People with coelac disease have a permanent intolerance to gluten. This intolerance results in damage to the lining of the intestine, specifically the small bowel, causing the tiny finger-like villi that line the inside of the bowel to flatten. The result of the villi flattening is reduced absorption of nutrients and minerals from food as this is the function of normal healthy villi.

Gluten is a protein present in wheat, rye, barley and possibly oats. The only treatment for coeliac disease is complete removal of gluten from the diet. This enables a reversal of the damage to the villi and improved absorption of nutrients. If gluten is reintroduced relapse of the condition will occur as people with coeliac disease remain sensitive to gluten throughout their life.

The symptoms of coeliac disease vary greatly, ranging from numerous in some individuals to none at all in others. The most common symptoms are fatigue, weakness, diarrhoea, constipation, flatulence, cramping, bloating, nausea, vomiting, weight loss and aneamia. Other less common symptoms include easy bruising, ulceration of the tongue and mouth, muscle spasms and skin rashes. Additional signs often present in children are poor weight gain/ delayed development, irritability and large, bulky, foul stools. Long term risks of undiagnosed coeliac disease include osteoporosis, infertility, depression and increased risk of gastrointestinal carcinoma.

The wide range of symptoms associated with coeliac disease, can make diagnosis very difficult. A definitive diagnosis can only be made by biopsy showing that the bowel lining is damaged. Because of the invasiveness of this procedure, blood tests are useful tools to screen individuals for coeliac disease and determine whether further tests or a gluten free diet until a diagnosis has been established as this will interfere with test results.

Coeliac disease is much more common in Australia than previously thought. People with a family history of coeliac disease and those individuals experiencing suspicious, unexplained symptoms should consider being screened. Cold and flu season has well and truly set in, as evidence by the number of people coming into the pharmacy for cold and flu medication. These 'conventional' medications can be useful to relieve symptoms but will not speed up recovery, prevent a cold from progressing or prevent it from coming back! If you do become unwell this winter, why not arrange a consultation. I can then prescribe a natural remedy that will not only relieve the symptoms of a cold and flu but also shorten the duration of the illness and prevent future infections.

Flu Fighter Tea

This tea is fantastic to drink when you have a cold or flu. It is very warming and soothing for a cough or sore throat and can help support your immune system.
Bring 1 litre of water to the boil and add:
1 tablespoon of honey
2 teaspoons of fresh grated ginger
1 Lemon sliced (leave skin on)
1 cinnamon stick or half a teaspoon of cinnamon powder
6 cloves
1 clove of garlic
1/4 teaspoon of chopped chilli
Continue to boil for 1 minute. Allow to slightly cool and drink the tea freely throughout the day.

Immune Juice

This juice provides an excellent combination of vitamins, minerals and antioxidants which may help to keep you healthy.
1/2 to 1 inch piece of ginger
1/2 lemon
2 apples
2 carrots
1 fresh beetroot
Process in juicer and drink fresh

Heart Health in Women at Mid-life June 2007 Newsletter

I recently attended a seminar on assessment and treatment of women at mid-life. This seminar recounted the many herbs and dietary interventions shown to be of benefit in easing a woman's transition through this period, in particular treating peri-menopause. It also highlighted the importance of discussing with women of this age group their heart disease risk. Unfortunately, risk of heart disease increases dramatically following menopause with 1 in 2 women dying of this cause. Quite often people with a heart condition are asymptomatic which emphasizes the importance of risk assessment and reduction before problems arise. If you are postmenopausal ( no longer menstruating), I would advise you to take some simple steps to assiss your risk of heart disease. Have your doctor check cholesterol (LDL, HDL and triglyceride) as well as blood glucose levels. Bring these results along to your next consultation and I can couple this with other data such as age and blood pressure reading to assess your relative risk. The benefit of having your rilk assessed is that I can then help you with eating habits, physical activity and lifestyle adjustments to reduce heart risk where necessary.

Healthy Heart Breakfast

Chose a wholegrain cereal instead of white, this alone reduces heart disease risk by 20-40% eg Oats or a gluten-free, sugar free muesli.
Add:
Walnuts - these are a great source of omega 3, essential for healthy hearts.
Unhulled sesame seeds or sunflower kernals - these are both good sources of plant sterols which can help reduce cholesterol levels.
Viscous fibre - oats, barley or psyllium as these also lower cholesterol

CoEnzyme Q10 Your questions answered

What is CoQ10?
CoQ10 is a naturally occurring enzyme found in every living cell. It is essential for the manufacture of energy necessary for all of our body processes.

What will CoQ10 do for me?
In addition to being essential for energy production, CoQ10 is an excellent antioxidant and immune system stimulant. These properties make CoQ10 highly beneficial in the management and prevention of many diseases.

What conditions benefit from CoQ10?
The heart muscle contains the greatest amounts of CoQ10 in the body and many heart conditions benefit from CoQ10 supplementation. These conditions include stroke, congestive heart failure, high blood pressure, high cholesterol angina and atherosclerosis (cholesterol build up on artery walls) Taken before and after cardiac surgery CoQ10 has been shown to reduce complications and hasten recoveryl. CoQ10 has also been shown to dramatically improve periodontal disease (inflammation and infection of the gums) and may also be of benefit in migraine, headache, chronic obstructive pulmonary disease (COPD), Parkinson's disease and Huntington's chorea.

People with diabetes and obesity can benefit due to CoQ10's role in energy production. CoQ10 may also enhance aerobic capacity and muscle performance making it a great supplement for athletes and people suffering fatigue (eg. Chronic Fatigue Syndrome or post-viral syndromes)or for those with muscular dystrophies.

I am on Cholesterol-lowering medication and have been advised to take CoQ10. Why is this?
Certain drugs used to treat high cholesterol (statins) have been found to decrease the levels of CoQ10 in the body. This occurs because the role of these medications is to inhibit the inzyme HmgCoA-reductase which is involved in production of cholesterol by our body. This enzyme is also essential for CoQ10 manufacture, an action that is therefore also blocked by statin medications. Many people taking statin medications experience muscle aches and pains, believed to be due to the deficiency in CoQ10 that occurs. Supplementation with 100mg/day of CoQ10 day restores levels to normal and reverses some of these side-effects of statin use. It is also very important to supplement with CoQ10 if on statin medication as CoQ10 deficiency is associated with various heart conditions and people with high cholesterol are already at a higher risk of heart problems.

What dose should I take?
The recommended dose to take in conjunction with statin medications is 100mg a day. Dosage recommendations vary depending on condition being treated, I can advise you on the best dose for your circumstances.

Why Supplement? Don't I get CoQ10 through my diet?
CoQ10 is found in meat and fish products and in lesser quantities in boiled broccoli, cauliflower, nuts, spinach and soy. The CoQ10 in these foods are significantly reduced however by length of storage, processing and cooking. In addition to this, poor eating habits, stress, infection, statin medications and aging all affect the body's ability to produce adequate amounts of CoQ10.

Are there any safety issues with taking CoQ10?
CoQ10 is extremely well tolerated and on toxic with very little occurrence of side-effects.

Will CoQ10 interact with other medications I am using?
It is important to let your doctor know if you are considering using CoQ10 and are already on Warfarin as there is a potential for interaction. CoQ10 can reduce the vascular side-effects of the eye drops Timolol without effecting eye pressure.

Lose weight June 2007 Newsletter

Go to work on two eggs, and start your lunch with soup

These were the headlines of two articles I read recently highlighting new research into successful weight loss methods. According to these articles scientists have found that people who start their day with poached, boiled or scrambled eggs can lose up to two-thirds more weight than others who consumed bagels for the study. The proposed reasons for the egg's success is that those who breakfasted on egg felt as if they had more energy. They also felt fuller for longer which meant they ate less during the rest of the day. The reason for this filling effect of eggs is believed to be due to their protein content.

In another study, researchers found that 'a bowl of soup a day could keep the pounds at bay'. By adding a low calorie vegetable broth to the start of a meal, it was found that you tend to feel full sooner which means that you consume less of the main course. I recommend that you give this a try, especially now the cooler months have set in! Just one reminder, make sure the soups you chose are beased on a stock, not cream, or you may find they have an opposity effect to that desired

A Healthy Approach to Preventing Cellulite

Summer is here and we can no longer hide beneath our winter clothes. The distress and horror of seeing those little dimples on our thighs can be enough for some women to stay clear of the beach all summer long. But there are some things you can do to prevent the dreaded cellulite from occurring. Cellulite is a condition that affects millions of women all over the world. It results from the weakened connective tissues structures just below the surface of the skin. Women are affected by cellultite at least nine times more often than men due to the structural differences beneath the skins surface.

WHAT CAUSES CELLULITE?
If your body is storing large amounts of body fat, it needs some sort of structure to support the fat. So it sets up a network of protein strands called collagen. The importance of Fibre

Our digestive tract and skin are our first line of defense and are therefore very important parts of our immune system. Everything we eat, drink, smell, touch and breath comes in contact with these very delicate tissues. If we cut our skin the area becomes more susceptible to infection. This is also true for the digestive tract, if the strength of its lining is compromised we are more susceptible to problems in this area. Adequate daily intake of fibre is important in maintaining the integrity of this lining.

Fibre is an indigestible food substance found in plants that is essential for a healthy digestive tract and good bowel function. Fibre does not contain any calories and can actually enhance the weight-loss effect of an appropriate diet. Fibre also protects against medical conditions such as constipation, haemorrhoids, digestive disorders, diverticulosis and colon cancer. Adequate intake of soluble fibre helps to reduce elevated cholesterol levels and by delaying absorption of glucose from the digestive tract helps control blood sugar fluctuations in diabetics.

There are two types of fibre, soluble and insoluble.

*INSOLUBLE FIBRE is found in foods such as whole grains and certain fruits and vegetables. Psyllium is a source of insoluble fibre that, if taken on a daily basis, will help maintain regularity.

*SOLUBLE FIBRE is found in foods such as oat bran, apples and other types of fruit and vegetables. This is great for people who need a daily fibre supplement but can't handle the texture of psyllium.

High Cholesterol Targets more than just your heart!

Preventing heart attacks and strokes are not the only reason now to limit Cholesterol in your diet.
Scientists say dementia and prostate cancer may be linked to uncontrolled cholesterol.
Cholesterol can be controlled. Cholesterol is a fat like substance primarily produced by the liver but also absorbed into the blood when you eat animal products like meats and dairy. Too much cholesterol can lead to a build up of plaque in the arteries and therfore increase the risk of stroke and heart attack.

Swedish researchers have found that people with healthier lifestyles who were physically active had normal blood pressure levels and controlled their cholesterol intake were less likely to develope dementia. Researchers in Italy also report that prostate cancer was more likely to develope in older men who also had high cholesterol levels. Men over 65 had an 80% greater likelihood of having high cholesterol. Previous studies have found that men with high cholesterol levels especially if they were detected before age 50, appeared to have higher risk of prostate cancer.

Although more studies are necessary to identify and confirm cholesterols role in dementia and prostate cancer, it is becoming clear that controlling cholesterol - along with healthy lifestyle habits (Diet and Exercise) - may be key to preventing many diseases and conditions.

A Word on Eggs.....

The humble egg has been the source of much scrutiny because of naturally occuring cholesterol but studies have shown that eating eggs regularly (2eggs a day for 6 weeks) had no effect on blood cholesterol.

Eggs are a great source of low-calorie protein as well as many important vitamins and minerals including choline, vitamins B2, B5, B12 and D, iodine and selenium to name but a few.

Eggs are also an excellent source of the vision-protective carotenoids, lutein and zeaxanthin, which may reduce the risk of developing age-related macular degeneration (AMD). In fact, studies have found that an egg a day boosts blood levels of lutein and zeaxanthin, thus reducing the risk of AMD-without increasing cholesterol or triglyceride levels. These finding make eggs and excellent addition to any meal!.

Fishy Facts

Fishy Facts With all the recent hype about Fish Oils and their use in children for learning and behavioral problems, I thought I would take the opportunity to highlight their many other benefits. Fish Oil is a good source of the omega 3 fatty acids eciosapentaenoic acid (EPA) and docosahexaenoic acid (DHA) and it is these components that are responsible for Fish Oils numerous health benefits. EPA and DHA are found in highest concentration in deep sea fish as they stop these fish from freezing in the cold ocean depths. Particularly good sources are mackerel, herrings, sardines, tuna, salmon, anchovies, halibut and bass. The omega 3 fatty acids are an essential component of brain matter and are necessary for brain function. Studies have found them to be useful for people suffering depression or aggressive behavior and for children with learning difficulties or behavioral problems such as ADHD. Benign Prostatic Hyperplasia

Benign Prostatic Hyperplasia (BHP) is a non-cancerous enlargement of the prostate gland. This condition is commonly seen in men over 50 years of age. Symptoms of BPH occur due to obstruction of the bladder when the enlarged prostate pinches off flow of the urine. Symptoms include straining when beginning to urinate, a dribbling or weak flow of urine, an increased need to urinate (especially at night), a sudden and urgent need to urinate and needing to urinate again shortly after passing urine. If experiencing symptoms of BPH it is important to see a doctor for an accurate diagnosis. The following are some simple diet tips to keep you prostrate healthy.
1. Eat foods rich in zinc. Nuts and seeds (especially pumpkin seeds) are good sources
2. Increase intake of fish, flaxseed oil and walnuts - foods that are excellent sources of essential fatty acids.
3. Eat adequate protein in the form of fish, nuts, eggs, lean meats, chicken. Choose hormone free and organic where possible
4. Eat soy foods as these may help prostate problems - tofu, soy milk, tempeh
5. Eat plenty of fresh fruit, particularly red-skinned varieties as these are particularly high in antioxidants.

Asthma Prevention Strategies

Asthma is a disorder involving inflammation of the airways. The resultant narrowing of the airway can lead to attacks of wheezing, shortness of breath, coughing and mucus congestion. These attacks are usually mild but can be severe enough to cause an inability to breath. Asthma may begin at any age and if neglected tends to recur and become chronic. Many factors may be involved in the onset of asthma and, where possible, should be avoided in susceptible individuals. These include:
*Viral/fungal infection
*Allergenic foods (most commonly, cow's milk, eggs, chocolate, soya formula, corn, rice, citrus or apple) or additives.
*Airborne pollutants eg. cigarette smoke, diesel fumes, pollen, dust mites or molds.
*Emotional factor
*Nutritional factor
*Family history of asthma

Asthma prevention strategies employed in the first year of life may reduce the risk of developing asthma by 56%. These strategies include avoidance of dust mites and second-hand smoke, encouragement of breastfeeding and delayed introduction of solid foods in the first 12 months of life. Nutritional status of pregnant women can also influence an infant's likely of develop allergies to foods.
Dietary strategies to prevent adult onset of asthma are also important. A diet low in salt, omega-6 fatty acids and trans-fatty acids (found in deep-fried foods, margarine, potato chips) but high in omega-3 fats (from fish, almonds, walnuts, pumpkin and flaxseeds), onions, fruit and vegetables (5+ servings a day) reduces the risk of developing asthma. Any known allergens should be avoided and plenty of water should be consumed. For asthma that is induced by exercise taking 2g of vitamin C and 2g of fish oils one hour before exercise may be helpful. There are many more nutritional prevention strategies of asthma. All in a good night's sleep

More about Zinc

Acne

Acne usually affects the face, neck, center of chest, upper back and shoulders.  The most common age is 14 - 19, although people in their 20’s and 30’s may also have acne, and it can reappear at menopause.  Acne is an inflammation, which also involves a bacterial infection.

Acne does not mean you are dirty or unhygienic.  There is no need to wash your face frequently. Normal twice daily washing, with soap substitute (not an antiseptic) is sufficient.  Food does not usually influence acne.  If hair is greasy, keep it off your face as this can worsen the blocked pores.  Do not wear cake make-up, instead look for water-based cosmetics. Use a gentle make-up remover.  Acne already present will not disappear any faster with treatment, but treatment will help prevent further pimples.
